Answer provided by Referee Gary Voshol The Laws do not differentiate between player positions, except for the goalkeeper. Each team has up to 11 players - local rule modifications may lessen this number at the younger ages like U10. Any or all of the players may be playing defense at any time.
If a team has too many players on the field, the referee should stop play and have the extra players removed. This is a cautionable offense. The game is then restarted with an indirect free kick for the opponents.

Incidentally the laws of the game do not require a certain number of players to exist in any particular place on the field of play. As long as they are on the field, they're fine.
