how many players make up a full soccer team? not just players on the field - I already know that it is 11.

That will depend on the rules of the competition. Common roster limits are 18, 22, 23 or 25 players. Lower numbers for younger ages that play less than 11v11.

When playing a match the team consists of a maximum of 11 players and 7 named substitutes.

It depends on your local league's rules. Commonly throughout the world FIFA mandates that a team may carry 11 field players and 7 subs on the roster.

My local amateur league permits 11 players and 11 subs to dress for the game.

The NCAA does not really place a limit on the number a players a team may carry on its roster. Though at the DI and DII levels there are only a certain number of scholarships available per team. DIII offers no scholarships.

So as you can see - the answer varries from league to league and from one code of laws to another code of rules.
