Sure, if you think they are fast enough to get back to cover when play goes the other way.

Remember that any players in their own half are not in an offside position, no matter where the opponents might be.

Yes you can. Players are free to go where they want during dynamic play provided they are not infringing any other laws.

I was taught that when a team is attacking, there are no defenders, and when the other team is attacking, everyone is a defender. If that is true, how would you know who to leave on your end of the field?

John the only thing preventing where players can go on the field is the wishes of the manager, coach or trainer. The Laws of the Game do not prevent players from being anyplace on the field except at the start or restart of play.
