can you be offside on a goal kick with the offensive players in the opponents end

When a player takes a goal kick, the first teammate who plays the ball is exempt from offside, no matter where he is on the field or where the opponents are.

None of the opponents of the player taking the goal kick are considered for offside, as they are receiving the ball on a controlled play by an opponent.

There is no offside offense if a ball is received directly at a goal kick regardless of the position of the players. That is to say, even if an attacking player is in offside position, he is allowed to participate in play at the taking of a goal kick. This is also true of a corner kick and throw-in.
