What do the whistles sound like for quarters? And How long are the quarters for 5 and under?

Read your local rules for the time of quarters.

As for the whistle, blow it as soft or hard, long or short as needed to stop the game. It is a very individual thing.

Soccer is played in 2 equal halves. If your Leagues modified this you need to check with them. Probably 12 minute quarters. Blow the whistle loud enough so everyone know the quarter is over
