If both your heels are firmly planted on the touchline but your toes are on the field of play during a throw in, would that be a legal throw in?

It would. As long as any part of each foot is touching the line, the position is proper.

It is a myth of the game that the feet cannot extend into the field.

What you describe would be a legal throw in. As long as part of the foot it touching any part of the line that is deemed to be legal.
Once all of the foot is over all of the line then that is an incorrectly taken throw in.

Law 15 says that part of each foot must be on the ground on or behind the line. If the heels are on the line, that's part of each foot. It doesn't matter if the toes are beyond the line.

Only if the whole foot is beyond the line would it be in illegal throw.
